Favorite foods for summer...
We usually don't turn on any burners on a stove in the kitchen in the summer since we don't have AC. We don't need any AC because our climate is Mediterranean like and pleasant most of the year even though we can have have a couple of 100°+F weeks and even months and occasionally a little snow but this close to the ocean we mostly get the marine influence rather than a "Santa Ana Winds" off the desert.
We either use the Croc-pot, microwave, our ancient infrared Flavr-Wave oven, indoors and the BBQ, Pellet Smoker or Big smoker outdoors most of the time. I also have a two burner stove in the patio by the BBQ For cooking things like spaghetti, sauce and Tamales. Our Traeger pellet smoker is best for beef and chicken as it seems to dry fish out a bit.
Some years and in the past we have caught tonnage of Tuna which I use my commercial smoker for. There is nothing better than smoked Albacore, Yellowtail, Barracuda and racks of ribs on my smoker. We leave the darker Tuna like Bluefin for "blackened tuna" recipes, sushi and sashimi. We reserve the Wahoo, Mahi Mahi and Barracuda for fish TACO's and Yellowtail, White Seabass and Whitefish for Ceviche.
My whole street can sometimes turn into an international Smorgasbord for any reason.
